HEAD CHEF – TOP END BRASSERIE – ECLECTIC CUISINE – BRIGHTON
This very busy, top end brasserie, which is part of an up and coming restaurant group, is seeking an experienced Head Chef to join its brigade. You will be creating fresh modern Eclectic cuisine and there is a strong focus on using only the best seasonal produce, sustainably sourced fish and finest cuts of meats, all which are sourced locally and bought in fresh daily. You must have experience within high volume restaurants to be considered for this role. Experience within Rosette establishments would be a big advantage.
As Head Chef, you will be responsible for restructuring the kitchen, planning new menus and developing and motivating the kitchen team. You will also be responsible for all stock control, financial discipline within the kitchen, waste control and ensuring that all hygiene requirements are met to the highest standards. An attractive salary package of £54,000 per annum is available for the right Head Chef. This is a live out position, so you will ideally already be residing in the Brighton/East Sussex area or able to secure accommodation.
